With credentials like this, it's quite easy to understand why Chef Goto has done away with elements common to many Japanese eateries, and focused his considerable talents on a kaiseki-only menu. There are only three menus available to diners, one for lunch at $68 and two for dinner at $180 and $280 respectively, all offering kaiseki cuisine.
For those who haven't yet experienced the refined delights of kaiseki cookery, it is considered one of the highest culinary art forms, characterized by a balance of more than taste and texture, but also of colour and appearance.
