| The environment of Absinthe is friendly, with a professional and personal service - all the best to bring out the charming nature of the location within a traditional conservation shop-house in Bukit Pasoh. The ambience and visual appeal is further enhanced within the main dining area of the restaurant with views through a glass panel to the kitchen of Chef Francois creating his signature dishes. A more intimate dining experience is to be had within the Wine Cellar, surrounded by a selection of some of the best French wines. |
| It is perhaps no surprise that the wine list is dominated by Burgundies and fine wines from the Bordeaux region. Other wine producing nations are represented too though, and with wine served by the glass or half bottle, there are ample opportunities to complement the food with just the right wine. When it comes to the menu, Francois' Southern French influences are very much in evidence, with touches of the Mediterranean serving to enhance the culinary tour of France. |
From the A La Carte winter menu comes such wonderful starters as Joue de Kurobuta Braisee and Brochette d'Escargot - a delicate and delicious dish with Braised Pork Cheek and Escargot Skewer served with a Pear and Spices, Chutney and Baby Rocket Salad.
Superb soups are also available, such as the Bouillon Au Jambon Iberique - an Iberico Ham Broth with Vegetable Brunoise and Ceps Dumplings.
Main courses at Absinthe are dominated by first class fish and seafood dishes such as Roasted Black Cod with Potato Croquette, Roasted Tomato Coulis and Basil Chutney, and delicious game and meat dishes such as Rib of Australian Wagyu Beef; a meal for two persons served with Potato Gratin, Steamed Vegetables, and Bearnaise Sauce.
The Braised Rabbit Leg with Cognac and Seasonal Vegetables is another popular choice. A full selection of delicious desserts and cheeses are available as the perfect conclusion to any meal. |

| Absinthe is open for lunch, Monday to Friday from 12.00 to 2.30pm and a set lunch menu offers three courses and coffee for $38. Dinner is served, Monday through to Saturday from 6.30pm till late with the last order taken at 10.30pm.
